Bacon Baked Beans

Easy Baked Beans

     I attended a church get together a few months ago and a friend (I didn't know this person then but anyone who cooks this good is my immediate bff!) was heating these wonderful beans on an outdoor grill.  Although they are simple and easy to make the chunks of bacon and peppers really make this something special!  Here's the recipe!

Bacon Baked Beans

Ingredients (Serves 10)
  • 1 lb. thick bacon
  • 1 medium onion, diced
  • 1 large green pepper, diced
  • 1 28 oz can Van De Camps pork and beans
  • 1 28 oz Bushes Boston Style Beans
  • 1/3 to 1/2 cup brown sugar
  • 2 Tablespoons molasses
Instructions
Cut bacon slices into 1 inches pieces and fry until almost crisp.
Remove bacon and saute onion and green pepper in bacon drippings until tender.
Add bacon back into pan.
Add brown sugar and molasses to mixture
Add both cans of beans and combine well.
Place all ingredients into an 8 x 11 1/2 pan.
Bake at 350 degrees for about 20 minutes or until heated through.

Healthy Rice Krispy Treats

These peanut butter, honey rice treats are healthy!  They are really really healthy!  I think I deserve a pat on the back for this one.  I have to be the first to admit that when I make treats "healthy"  isn't always my first consideration.  I needed to teach a women's group about some healthy treats they could make for their children this summer and so the search was on!  What I loved about these treats is that they are simple to make and taste great.  So what's not to love??

Healthy Rice KrispyTreats

Prep Time: 5 minutes
Cook Time: 5 minutes

Ingredients (9 - 12 treats)
  • 4 cups rice cereal
  • 1/2 cup honey
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
Instructions
Line a 9x9 baking pan with parchment paper
2. Heat the honey, peanut butter, vanilla and salt in a pan over low heat until it all melts together.
3. Pour the rice cereal into a large bowl and pour the melted honey and peanut butter over it. Stir together.
4. Press into the baking pan HARD using either a rubber spatula or your hand with wax or parchment paper.
5. Let cool and cut into squares.

Chewy Granola Chip Bars - 5 Ingredients!

     I know I have been saying on many recipes that they are fast and easy, but it needs to be said again for these bars. With only 5 ingredients and a no bake recipe you know they have to be quick!

      I was asked to find some fast and healthy snack for a women's meeting in my church.  I have tried several recipes and a few just weren't what I would call tasty,(of course I am the sugar queen)  but when I found this recipe I knew I had hit the mark!  Wow!  They are soooo good and have healthy ingredients too!   (I am not sure about the peanut butter chips but you can cut down on them or leave them out entirely if you choose.)  

     They are especially easy to make because you can buy granola (in any degree of healthy you desire) and just add it to the mix, pour into a pan, cool and eat!  This makes a great snack for kids who are home for the summer.




Bring the butter, sugar, and honey in a pan to a boil and simmer over medium low heat about 2 minutes.

Add granola and rice cereal and stir until it is well coated.  
Press the mixture in a 11 x 7 inch parchment lined pan.  Sprinkle both flavors of chips over the granola bars and let mixture cool.  Lift the bars out of the pan and cut into long granola bar shapes.

Chewy Granola Chip Bars

Prep Time: 15 minutes
Cook Time: 5 minutes
Ingredients (8- 10 Bars)
  • 4 Tablespoons butter
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 cups purchased granola (I like cinnamon raisin)
  • 1 cup crispy rice cereal
  • 1/4 cup semi sweet chocolate chips
  • 1/4 cup peanut butter chips
Instructions
Line an 11 x 7 baking pan with parchment and spray with cooking spray.
Put 1st 3 ingredients in a pan and heat to boiling. Reduce heat and simmer until sugar is dissolved. About 2 minutes. Remove from heat.
Add granola and rice cereal and stir until coated.
Spread the mixture into the pan and press into the corners.
Let cool and then lift from pan and cut into bars. Place in fridge if they are too soft to stick together.

Italian Beef Dip

Quick and easy meal

     This is an especially easy dinner. It takes only 5 purchased ingredients and a couple of spices you should already have in you cupboard. Dinner can be on the table in about 15 minutes.  You can use fancy Hoagie Buns or toasted Hamburger buns you have on hand.  Be prepared for a busy day by buying the sliced deli meat and cheese ahead of time and freeze the meat to be pulled out in a pinch.

     So full of flavor your family won't believe you haven't been slaving in the kitchen for hours!

Simmer the first 5 ingredients together in a skillet for about 5 minutes. 


      Remove pepper strips and add beef to heat through.  Butter the top of the buns and place them next to the bottom buns on a cookie sheet. Divide beef between bottom buns and top with cooked pepper and cheese. Place cookie sheet filled with sandwiches under the broiler for a short time until the cheese melts and the tops are toasted.  Serve remaining juice in a small bowl with sandwiches as a dip.

Italian Beef Dip

Ingredients (6 sandwiches)
  • 2- 10 oz cans Campbells beef broth
  • 4 teaspoons minced garlic
  • 2 teaspoon dried oregano leaves
  • 1/4 teaspoon pepper
  • 1 medium green or red bell pepper, thinly sliced
  • 3/4 lb. thinly sliced deli roast beef
  • 6 thinly sliced Swiss cheese slices
  • 6 Hoagie Buns
Instructions
Simmer the first 5 ingredients together in a uncovered skillet for about 5 minutes until peppers are tender.
Remove pepper strips and cover to keep warm.
Bring broth to a boil again.
Add beef, cover pan, and remove from heat.
Leave to heat meat through for about 2 minutes.
Butter the top of the buns and place them next to the bottom buns on a cookie sheet.
Divide beef between bottom buns and top with cooked pepper and cheese.
Place cookie sheet filled with sandwiches under the broiler for a short time until the
cheese melts and the tops are toasted.
Serve remaining juice in a small bowl as a dip for the sandwiches.

Ranch BLT Chicken Tacos

Chicken Tacos
     Summer is on the way and it is time to think about some great recipes for the hot days ahead.  This recipe is one of those recipes you will want to have handy.  ALL the time!!  It is fast and simple to prepare and doesn't take hours over a hot stove to make.  Just a few ingredients and a couple of steps to a taco bursting with flavor!  Try it, you'll like it!!

     This is a recipe that is easily adjusted to make any amount to fit the amount of mouths to feed.  Each taco takes about 1/4 lb of chicken and 1/2 slice of bacon.  Multiply that by the number of tacos you need.  The recipe below is the way I make them but feel free to add more bacon and taco seasoning or less, make them the way you like them!  Enjoy!


Ranch BLT Chicken Tacos

Ingredients (6 Tacos)
    Tacos
    • 24 oz. Boneless chicken breast
    • 3 slices bacon
    • 2 teaspoons Taco Bell Taco Seasoning
    • 6 Flour Tortillas
    Toppings
    • Chopped Lettuce
    • Chopped Tomatoes
    • Ranch Dressing
    Instructions
    Cut chicken breast into small 1/2 inch pieces.
    Fry bacon in a skillet and remove to drain on paper towels.
    Fry chicken in bacon grease until juices run clear. Remove from heat.
    Sprinkle taco seasoning over chicken and add bacon back into pan.
    Fill warmed taco shells with meat mixture and toppings.

    Chicken Marengo


    Easy Chicken Dinner


     This simple, 6 ingredient  recipe for Chicken Marengo is sooo delicious.  I found it years ago on the back of a Campbell's soup can.  I have to say that the soups by themselves are good but when you combine them they create a whole new and rich flavor.  My family has loved this recipe for years and I hope you will have it as a new tradition in yours!





    Wash and cut up about 3 lbs of bone in chicken pieces.  (You could use boneless chicken breast, it isn't as flavorful but would be good.  Reduce cooking time to about 15 minutes or until chicken is cooked through and check often to prevent over cooking.)




    Assemble ingredients and thinly slice the onions.
    Brown the chicken pieces with oil in a skillet over med high heat.  Reduce heat and remove oil. 

     Add remaining ingredients and separate onion rings over the top.  Bring to a simmer and cover.  Cook on medium low heat for about 45 minutes checking and turning every 10 minutes to avoid over browning.
    Serve with rice.

    • 3 Tablespoons olive oil
    • 1 10.5 oz can Golden Mushroom soup
    • 1 10.5 oz can Tomato soup
    • 1 Tablespoon minced garlic
    • 1 large or 2 medium onions
    Instructions
    Wash and cut up about 3 lbs of bone in chicken pieces
    Assemble ingredients and thinly slice the onions.
    Brown the chicken pieces with oil in a skillet over med high heat.
    Reduce heat and remove oil.
    Add remaining ingredients and separate onion rings over the top.
    Bring to a simmer and cover.

    Cookie Dough Frosted Brownies

         Brownies hold a special place in most people's heart just by themselves.  That warm chocolate chewy goodness we love is a wonderful thing.  The recipe I bring to you today does not try to improve on that.  This cookie dough frosting is just the perfect compliment to the deep chocolate flavor found in this unique brownie base. 

          I need to give my son in law credit for finding this recipe (he found it in Mel's Kitchen Cafe)When he served these for my daughter's birthday party, I couldn't get home fast enough to make them again! The Cookie Dough frosting is really something special.  It doesn't overpower your taste buds or taste too sweet.  I know you will love them too! 

         First you make the brownies by melting butter and chocolate chips together in a pan over low heat.  (Yes you heard correctly, there are melted chocolate chips in the batter!)  When they are melted take the pan off the heat and stir in the sugar.  Add the eggs one by one until each is fully incorporated.  Add flour and salt and beat until you see bubbles in the batter.  Pour batter into a 13 x 9 pan and bake at 350 degrees for 20 minutes.  Turn heat to 325 degrees and bake for 10 minutes more.  Remove from oven and allow to cool.

    While the brownies cool, make your frosting.  Cream the butter and sugars together until light and then add the milk and vanilla.  Slowly add in the flour and salt until blended.  Stir in chocolate chips.

    Drop in small spoonfuls over the top of the brownies evenly. 










    Carefully use the back of a tablespoon to slowly smooth the frosting over the top of the brownies.  Enjoy!

    Ingredients (13 x 9 pan)
      For the Brownies
      • 1 12 oz. bag semi sweet chocolate chips

      For the Frosting
      • 1/2 cup butter, softened
      • 1/2 cup brown sugar
      • 1/4 cup sugar
      • 3 Tablespoons milk
      • 1 teaspoon vanilla
      • 3/4 cup flour
      • pinch of salt
      • 1 cup semi sweet chocolate chips
      Instructions
      For the Brownies

      Popovers with Creamed Chipped Beef

      Delicious eggy muffins that are Elegant and Easy!
      I am so excited to share this recipe with you! Some time ago (we are definitely not saying how long) when I was about 10 years old, (it really wasn't THAT long ago!) I found an incredible recipe in a children's magazine.  It said anyone, even a child could make it.  So I got out a pencil and wrote it down. And guess what?  They were right.  I did make it then and I still make it now because it is so delicious.  The recipe was for Popovers.  Here is a picture of my original recipe card that I wrote.
















           I have ancestors from England and my mother told me that these popovers were much like the Yorkshire Pudding my great Grandmother used to make for my mom when she was little.  So I found from some research that creamed chip beef would be good served over these delicious eggy muffins. 

            I have one confession to make and that is that the beef I use is not real chipped beef although I think that would be good also.  I buy the thin sliced Carl Budding or Land O Frost -2 oz.- packages in the deli case at the store.  It is wonderful in this recipe and much less expensive. 

            I call this recipe Elegant, Easy, and Economical.  The only drawback is that much like a souffle these popovers will shrink if left out of the oven for more than a few minutes.  They still taste great they just aren't as pretty.  Because of this you need to make the batter ahead of time if you want but don't put them in the oven until about 25 minutes before you want to serve them.  They will come out beautiful and taste out of this world!
      Begin by generously applying shortening to your muffin pan cups.  Add a little more than you think is necessary.  Then be sure to place the tins in the freezer while you make the batter.  This helps the popovers do just that!  Pop Over!
                                                                   Now whisk the ingredients together until smooth. 
           
       So easy! 
       Divide the batter into the 12 muffin cups evenly.
      Bake in a preheated oven (450 F) until golden.  About 25 minutes












      While your popovers are cooking, make the creamed beef.  Melt the butter in a small pan over low heat.  Add the flour and salt and quickly whisk it together until well blended.  Add the milk and bring to a boil over medium heat.  Stir often.  While it is heating open the packaged beef and rip it into thin strips and separate it as much as you can. 
      When the white sauce has come to a boil for about one minute (Stirring constantly), stir in the beef and remove from heat.
      Serve over popovers.

        • 3 packages (2 oz) Carl Budding thin sliced beef
        • 6 Tablespoons butter
        • 6 Tablespoons flour
        • 3 cups milk
        Instructions
        Popovers

        Italian Style Pork Chops

        Buttery, Crispy, Baked Pork Chops your family will love!
        I have tried many, many pork chop recipes and very few reach the level of flavor these Italian Pork Chops have.  They are baked with a crispy, buttery crust that leaves you wanting more!  Very easy to make and only 30 minutes in the oven and you are ready to eat!  Please try these and let me know if you love them!  

        Prepare the breading mix by crushing crackers:

         Mix together with Parmesan cheese and spices:
         Set up an assembly line:
         Dip meat in butter, letting as much as possible run back into the bowl:
         Dredge in cracker crumb mix:
         Place in pan:
         Bake at 425 Degrees F for 30 to 40 minutes.


        Add some side dishes and you have an amazing meal!
        Tip:   I like to make up a double recipe and put 1/2 in a zip lock bag in the fridge for future use!  When I am in a rush this will save a lot of time!

        Italian Style Pork Chops

        Prep Time: 20 minutes
        Cook Time: 30 minutes
        Keywords: bake entree Italian
        Ingredients (serves 5)
        • 1 cup crushed saltine crackers (about 18 crackers)
        • 1/2 cup grated Parmesan Cheese (I use the kind you shake from a bottle)
        • 1/4 teaspoon garlic powder
        • 1 teaspoon Italian-style seasoning
        • 5 Tablespoons butter
        • 5 Bone-in pork chops
        Instructions
        Preheat oven to 425 degrees F
        In a medium bowl, combine the crushed saltines, cheese, and seasonings.
        Set up an assembly line of meat, then melted butter in a bowl, then crackers, and finally a 13 x 9 pan to set the coated meat in.
        Dip the meat in butter and then dredge in the cracker crumbs. Place in dish.
        Bake at 425 F for 30 to 40 minutes taking care to check often with a meat thermometer until meat reaches 160 F degrees. Do not overcook!
